A cerveja é o único ingrediente comum a todas as versões.

Francesinha and tripas: two dishes that help explain Porto

A sandwich invented in 1953 and a stew with centuries of legend: how two dishes sum up Porto’s relationship with the table.

Some dishes are eaten and some dishes are told. In Porto, two of them, one barely seventy years old and another with centuries of legend, sum up how the city looks at food: with pride, with humour and without hurry.

A sandwich born in 1953

The most widely told story credits the invention of the francesinha to Daniel David da Silva. After living in France and Belgium, he returned to Portugal with the idea of adapting the croque-monsieur to Portuguese taste. In 1953, he presented the result at the restaurant A Regaleira, on Rua do Bonjardim, in Porto. The name, which means “little Frenchie”, is a tribute to those origins.

The recipe is built in layers: toasted bread, several meats (such as roast meat, steak, ham, linguiça or fresh sausage) and cheese, all covered in a tomato and beer sauce served almost boiling, which melts the cheese at the table. It usually comes with fries. Beer is the only ingredient common to every version. The rest, from how spicy it is to the colour of the sauce, is each house’s secret, which is why in Porto no two francesinhas are alike and no argument about them ends quickly.

More than six hundred years of legend

Tripas à moda do Porto have a much older, and less certain, origin. Tradition says that in 1415, when Prince Henry the Navigator’s fleet was preparing to conquer Ceuta, the animals slaughtered in the city were used to supply the ships. The good meat went on board, and the people of Porto were left with the tripe and offal, which they learned to turn into a dish. It is a legend, and the sources themselves treat it as one, but it is so rooted in the city’s memory that people from Porto are still called “tripeiros”.

The stew uses veal tripe, cleaned with salt and lemon, plus cured sausages, ham, bacon and, in many recipes, chicken. It also has white beans, carrot, onion and bay leaf. It is served in a clay tureen, with chopped parsley, white rice and salad. The secret, cooks say, is to cook the beans together with the tripe.

Two dishes, one city

Between the 1953 sandwich and the 1415 stew there is a common thread: Porto turns what it has at hand into a reason to celebrate. That same logic, taking a few ingredients and giving them time, guides the Neapolitan cooking we serve at the Forneria, in Downtown Porto, and at the Pizzeria, in Vila Nova de Gaia.
